Refreshing recipes for the summer

When temperatures reach the 30 °C mark, many people don't want to spend long in the kitchen. That's why we've collected some refreshing recipes for you that are quick to prepare. They will make the hot days much more relaxing. Bon appétit!

Green smoothie bowl

Ingredients:

  • 2 bananas
  • 1 apple
  • 25 grams spinach leaves
  • 3 tbsp oat flakes
  • 1 kiwi
  • 60 gram blueberries
  • 100 ml coconut milk

Preparation:

First peel the apple, remove the core and cut it into pieces. Place the apple in the blender together with the bananas, spinach, oats and coconut milk. Alternatively, you can also use a hand blender. Blend everything into a creamy, thick smoothie.

Next, peel the kiwi and cut it into slices. Pour the smoothie into bowls and decorate the bowl with the kiwi slices and blueberries or other toppings of your choice.


Nice Cream with chocolate

Ingredients:

  • 3 frozen, sliced bananas
  • 4 tbsp oat milk or another liquid
  • 3 tbsp cocoa powder
  • 20 grams grated dark chocolate

Preparation:

Place the frozen banana slices in the blender together with the oat milk and cocoa powder and blend until creamy. Now mix in the chocolate shavings.

The nice cream is now ready! You can refine it with toppings of your choice or mix in other flavouring ingredients instead of chocolate. You can get creative here!


Chickpea salad with chilli

Ingredients:

  • 400 gram chickpeas
  • 1 chilli pepper
  • 1 onion
  • 15 grams fresh mint
  • 30 grams parsley
  • 1 clove of garlic
  • 250 grams cherry tomatoes

Dressing:

  • 50 millilitres olive oil
  • 4 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Preparation:

Rinse and drain the chickpeas. Then put them in a salad bowl. Finely chop the chilli pepper, parsley, mint, garlic and onion and add to the bowl. Halve the cherry tomatoes and mix them with the remaining ingredients.

Mix all the ingredients for the dressing together and mix into the salad.


Watermelon salad

Ingredients:

  • 500 grams watermelon
  • 300 grams rocket
  • 1 cucumber
  • Mung bean sprouts
  • ½ bunch of fresh mint
  • Date syrup
  • 1 lime
  • Salt and pepper to taste

 

Preparation:

Cut the flesh from the watermelon into small pieces. Put a handful to one side. Cut the rocket into small pieces. Cut the cucumber into strips. This is best done with a spiral cutter or a peeler. Mix the melon, rocket and cucumber with the mung bean sprouts and some of the mint leaves in a bowl.

Puree the remaining watermelon and mint leaves with the lime juice and date syrup to make the dressing. Add salt and pepper to taste.
